Mandarin Orange Poppy Seed Salad

Mandarin Orange Poppy Seed Salad 

2 heads Romaine Lettuce, cut and rinsed

2 cans (11 oz) mandarin oranges, drained

1/2 cup slivered almonds

1/2 red onion, thinly sliced


1 cup vegetable oil

1/2 cup red wine vinegar

3/4 cup sugar

1 teaspoon poppy seeds

1 teaspoon mustard

1 teaspoon salt


For dressing; combine all ingredients and mix well. Keep refrigerated and shake well before using.

For Salad; prepare lettuce and add oranges, almonds and onions.

Drizzle with desired amount of dressing and toss to coat.

store in ziploc bag with paper towel, removing as much air as possible.

(This is the way my mother taught me to keep lettuce crisp and fresh)

My cousin Kandy gave me this recipe years ago.  It is still a favorite of mine.

Kandy is the oldest Barendregt grandaughter and I am the youngest.
