WHITE LASAGNA

full of flavor with cheese, peppers, spinach, hot Italian sausage and a creamy Alfredo sauce

 White Lasagna

1-1/2 lbs. hot Italian sausage (in casings)

4 cloves garlic, minced

1 medium onion, chopped

12 oz jar roasted red pepper, drained and chopped

1/2 cup white grape juice

10 oz pkg. frozen chopped spinach

15 oz container ricotta cheese

1/2 teaspoon salt

1/2 teaspoon pepper

1 egg, lightly beaten

2 (16 0z) jars creamy Alfredo sauce

12-15 lasagna noodles, uncooked

16 oz mozzarella, cut 24 slices or 2 (6 oz) pkgs. of sliced mozzarella cheese, divided

1 cup grated refrigerated Parmesan cheese

Directions

Remove and discard sausage casings.  Brown sausage in a large skillet over medium heat, using a wooden spoon to crumble sausage as it cooks.  Drain sausage, reserving one tablespoon drippings in skillet.  Cook garlic and onion in reserved drippings over medium-high heat until onion is tender.  Stir in sausage, chopped red pepper and white grape juice.  Bring to a boil; reduce heat and simmer, uncovered, 5 minutes or until most of liquid has evaporated.  Cook spinach according to package directions, drain and squeeze between paper towels to remove excess liquid.  Combine spinach, ricotta cheese, salt, pepper and lightly beaten egg.  Stir well.  Spread one cup Alfredo sauce in a greased 13×9 inch baking dish.  Top with 4 to 5 uncooked noodles.  Top with half of spinach mixture and half of sausage mixture.  Place sliced mozzarella over sausage mixture.  Repeat layers.  Top with 4-5 uncooked noodles and mozzarella slices.  Spread remaining Alfredo sauce over the mozzarella cheese.  Sprinkle with Parmesan cheese.  Cover and and chill overnight.  Let stand at room temperature 30 minutes before baking.  Cover and bake at 350 degrees for one hour, uncover during last 15 minutes.  Let stand 15 minutes before serving. 

After cooking spinach, place on several paper towels and twist from the ends to remove excess liquid.  The liquid will be hot.

Combine spinach, ricotta cheese, salt, pepper and lightly beaten egg

Remove sausage from casings and brown sausage in skillet over medium heat, crumble sausage pieces while cooking; drain and reserve 1 tablespoon drippings

Cook garlic and onion in reserved drippings over medium-high heat until onion is tender.  Stir in sausage, chopped red pepper and white grape juice.  Bring to a boil; reduce heat and simmer, uncovered for 5 minutes or until most of the liquid has evaporated.

Spread one cup Alfredo sauce in a greased baking dish.  Top with 4-5 uncooked noodles.

Top with half of spinach mixture

Place sliced mozzarella cheese over sausage mixture and repeat layers

After repeating layers, top with 4-5 uncooked noodles and mozzarella slices.  Spread remaining Alfredo sauce over mozzarella cheese.  Sprinkle with Parmesan cheese.

Cover and refrigerate overnight

Remove from refrigerator and let stand at room temperature for 30 minutes before baking.  Bake in a preheated oven and 350 degrees for one hour, covered.  During the last 15 minutes of baking, uncover.

Let stand 15 minutes before serving
