 BARBEQUE BEEF SANDWICH

My friend Brad gave me his brown sugar rub recipe and boy is it good!

Crock Pot BBQ Beef Sandwich

3 lb chuck roast

olive oil

1 cup brown sugar

1 teaspoon cayenne pepper

1 teaspoon paprika

1 teaspoon salt

1 teaspoon black pepper

liquid smoke

1/4 cup reserved drippings from crock pot

1/2 cup BBQ sauce

DIRECTIONS

  Combine brown sugar, cayenne pepper, paprika, salt and black pepper. Mix well. Cover the chuck roast with olive oil on all sides. Pat on the brown sugar rub on all sides. Sprinkle liquid smoke on one side and place in crock pot liquid side down. Sprinkle the opposite side with additional liquid smoke. Cover and heat on high for 1 hour. Turn heat to low for 4 more hours or until meat easily pulls apart with a fork. Place cooked meat in a pan and pull apart with 2 forks. Add 1/4 cup drippings to the shredded beef and mix well.  Stir in 1/2 cup of your favorite BBQ sauce. Serve on warm or toasted buns.

Combine ingredients for the brown sugar rub

Cover roast with olive oil on all sides

Pat on the brown sugar rub on all sides

Sprinkle liquid smoke on one side and place in crock pot with the liquid side down. Sprinkle the opposite side with additional liquid smoke.

 

Cover and heat on high for 1 hour and reduce to low heat for 4 more hours or until meat pulls apart easily with a fork.

Place roast in a pan and pull apart with 2 forks

Mix in 1/4 cup reserved drippings

Stir in 1/2 cup of your favorite BBQ sauce

Serve on  warm or toasted buns

It tastes as good as it looks!
