BLACKBERRY RHUBARB CRISP

Blackberry Rhubarb Crisp Topped With Vanilla Bean Ice-Cream

 I made this just for you honey!

BLACKBERRY RHUBARB CRISP

8 cups thinly sliced rhubarb

4 cups blackberries

1 cup sugar

2/3 cup flour

1 teaspoon cinnamon

Topping

1 cup brown sugar

1 cup oatmeal

1 teaspoon cinnamon

1/2 cup butter

Directions

Combine sugar, flour and 1 teaspoon cinnamon and add rhubarb and berries. Toss to coat.  Place in a 9×13 dish.  For the topping; combine brown sugar, oatmeal, 1 teaspoon cinnamon and blend in butter using a pastry blender.  Sprinkle the topping over the rhubarb and blackberry mixture.  Bake for 35 minutes at 350 degrees in a preheated oven.

Rhubarb

Combine thinly sliced rhubarb and blackberries

Mix together sugar, flour and 1tsp. cinnamon.  Add the rhubarb and blackberries, toss to coat

Place in a glass 9×13 baking dish

For the topping; combine brown sugar, oatmeal, 1 tsp. cinnamon and 1/2 cup butter, using a pastry blender

Sprinkle on top of the rhubarb and berry mixture

Bake for 35 minutes at 350 degrees in a preheated oven

(Keep leftovers refrigerated and reheat in the microwave.  Best served warm)

Top it with a big scoop of vanilla ice-cream or whipped cream.  C’mon…give it a try.  Take a bite!

My husband loves rhubarb.  I was pretty sure I hated it.  His mother grew rhubarb in her garden and would fix their family delicious rhubarb pies.  My friend Natalie made this crisp and brought it into work and now I love rhubarb.  Thanks to my friend Tannis, I have rhubarb growing in my garden and she gave me the rhubarb to make this crisp for my husband.  I am lucky to work with these amazing ladies.  They always have sweet ideas.  My husband is thrilled we have rhubarb and can’t wait for a strawberry rhubarb pie…HELP I don’t have a recipe.

I was searching for a blackberry-rhubarb desert recipe and came upon your blog. I just made this crisp tonight and it was excellent! Vanilla ice cream was a great addition. Thanks for sharing!
