Delicious Pineapple and Pecan Dessert


3 egg whites

1 cup sugar

1 teaspoon baking powder

1 cup chopped pecans

30 Ritz crackers, crumbled

1 (20 oz) can crushed pineapple, drained

1 (8 oz) pkg. cream cheese

1 (8 oz) container Cool Whip


Beat egg whites until foamy.  Add sugar and baking powder.  Beat until stiff.  Fold in chopped pecans.  Add crumbled Ritz crackers.  Spread in 9×13 baking dish sprayed with cooking spray.  Bake at 350 degrees for 15 minutes.  Let stand and cool completely.  Drain can of crushed pineapple well.  Combine with softened cream cheese.  Fold in Cool Whip.  Spread over cooled crust.  Refrigerate for 6 hours or overnight.

Beat egg whites until foamy

Add sugar and baking powder and beat until stiff

Fold in chopped pecans and crumbled Ritz crackers

Spread in 9×13 greased baking dish and bake for 15 minutes in a preheated oven at 350 degrees


Combine well drained can of crushed pineapple and softened cream cheese

Fold in Cool Whip

Spread over cooled crust. Cover and refrigerate for 6 hours or overnight

A wonderful summer or fall dessert
