Stuffed Bell Pepper Soup

Stuffed Bell Pepper Soup

1 pound Italian hot sausage

1 pound lean ground beef

2 cans (14 0z) diced tomatoes

2 cans (15 oz) tomato sauce

2 cups cooked white rice

4 cups chopped green bell peppers

2 envelopes lipton onion dry soup mix

2 beef bouillon cubes

1/4 cup packed brown sugar

4 tablespoons apple cider vinegar

2  1/2 cups water

shredded mozzarella cheese

DIRECTIONS

Brown meat thoroughly.  Drain grease and combine with dry soup mix in a large pot.  Add remaining ingredients (except rice)  and bring to a boil.  Reduce heat and simmer for 30-40 minutes or until peppers are soft.  Add rice and simmer for 5 more minutes.  Scoop into bowls and top with shredded mozzarella cheese.

 My sweet Italian daddy taught me how to cook.  I loved spending time with him in his kitchen.

Let’s make some soup!!

Start with some beautiful green bell peppers

 Chop them up

I was blessed to have my Daddy Jess come to my home this week.  We shared a lot of “time” with each other.

We love stuffed bell peppers too. Thanks, we love living in the country. I do miss California.
